The 27-year-old, who had one year remaining on his previous deal, has committed himself to the Dale until summer 2016.
Vincenti scored seven goals in 49 appearances last season following his arrival from Aldershot Town.
Rochdale get their League One campaign underway at home to Peterborough United on August 9.
